These curry chickpeas are a very popular Trinidad street food, often sold inside a spicy flatbread called Bara and eaten as a sandwich.

Ingredients

  • 1/4 cup vegetable oil
  • 3 tbsp curry powder
  • 1 medium onion diced
  • 4 garlic cloves minced
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 2 tsp smoked paprika
  • 2 tsp thyme
  • 1 tsp cumin
  • 1 tsp white pepper
  • 3 cups chickpeas
  • 2 cups water
  • 1/2 tsp cayenne pepper
  • 2 green onions chopped
  • salt to taste

Instructions

  • Mix together all of the spices. Set aside.

  • Heat up cooking oil in a large sauce pan over medium high heat.Add in the onions and garlic. Cook for 2-3 minutes.

  • Add in all of the spices. Cook for 1-2 minutes.

  • You might need to add a lttle bit of water to prevent the onions and spices from burning.

  • Add in the chickpeas, water, and green onions. Bring to a boil. Reduce heat to medium and simmer for 20 minutes.

  • After the 20 minutes, the sauce should have thickened. Add salt to taste.
