Curry Chickpeas
These curry chickpeas are a very popular Trinidad street food, often sold inside a spicy flatbread called Bara and eaten as a sandwich.
Ingredients
- 1/4 cup vegetable oil
- 3 tbsp curry powder
- 1 medium onion diced
- 4 garlic cloves minced
- 1 tsp allspice
- 1 tsp nutmeg
- 2 tsp smoked paprika
- 2 tsp thyme
- 1 tsp cumin
- 1 tsp white pepper
- 3 cups chickpeas
- 2 cups water
- 1/2 tsp cayenne pepper
- 2 green onions chopped
- salt to taste
Instructions
- Mix together all of the spices. Set aside.
- Heat up cooking oil in a large sauce pan over medium high heat.Add in the onions and garlic. Cook for 2-3 minutes.
- Add in all of the spices. Cook for 1-2 minutes.
- You might need to add a lttle bit of water to prevent the onions and spices from burning.
- Add in the chickpeas, water, and green onions. Bring to a boil. Reduce heat to medium and simmer for 20 minutes.
- After the 20 minutes, the sauce should have thickened. Add salt to taste.
