Falafels

Falafels are eaten all over the Middle East and Mediterranean. In Arabic countries, falafels are traditionally made out of favs beans. This particular recipe is Persian, which are made out of garbanzo beans. A good rule of thumb is to make sure your griddle is lightly oiled and hot. These falafels are great in a pita with tomato, lettuce, onion, and yogurt sauce.
