Goat happens to be the most consumed meat in across the world; except in the U.S. I think that it tastes like a cross between beef and lamb; with the meat being leaner, lower in cholesterol, calories, and saturated fat. You can find goat at most ethnic markets for relatively cheap. My local Asian market sells bone in cubed goat shoulder in 2 1/2lb bags already frozen for $12.
‘Curried goat stew is really popular in African and Caribbean cuisine. The goat is first boiled in salted water. Boiling helps tenderize the goat, plus makes goat stock that you will use in the recipe. The goat is then sautéed with onions, ginger, garlic, tomatoes, and spices. After that, the goat stock is incorporated back into the pot. The goat stew is simmered for at least 45 minutes to an hour, allowing the goat to become more tender and the sauce to thicken. Serve the curried goat stew with rice.
If you want to be close minded to eating goat, there are a few different cuts of meat that you can substitute. If you want to use lamb, cubed bone in shoulder or lamb shanks would be acceptable cuts since they need to be slow cooked like the goat. For beef, cubed chuck, short ribs, brisket, or shanks will be suitable. But I still highly recommend trying goat.

Ingredients

  • 2 1/2 -3 lbs bone in goat shoulder cubed
  • 1/4 cup vegetable oil
  • 1 medium onion diced
  • 5 garlic cloves minced
  • 1 tbsp ginger minced
  • 4 Roma tomatoes diced
  • 4 tsp curry powder
  • 1 tsp white pepper
  • 1 tsp smoked paprika
  • 2 tsp thyme
  • 2 tsp salt
  • 1 habanero pepper
  • 2 green onions chopped
  • 2 tbsp cilantro chopped

Instructions

  • Add the goat to a pot of cold salted water. Bring to a boil and simmer for 1 hour.

  • Scoop out the goat and set aside.

  • Save the goat stock and set aside.

  • Heat up cooking oil in the same pot over medium high heat. Brown the goat gor 8-10 minutes.

  • Add in the onions, ginger, and garlic. Sauté for 2 minutes.

  • Add in the tomatoes, curry powder, white pepper, smoked paprika, thyme, and habanero pepper. Cook for 5 minutes.

  • Add in 3 cups of the goat stock, salt, green onions, and cilantro. Bring to a boil. Reduce the heat to medium and simmer for 45 minutes.

Serve with steamed rice. Garnish with chopped cilantro and green onions.
