Mojo marinade is of Cuban origin. It consists of sour orange juice, olive oil, and garlic, along with other herbs and spices. If you aren’t able to find sour oranges, you can substitute 2/3 part orange juice 1/3 part lime juice. This marinade is also great with pork, fish, and shrimp.

Ingredients

  • 3 lbs chicken pieces whole cut up chicken or thighs

Mojo Marinade

  • 3/4 cup sour orange juice
  • zest of 1 sour orange
  • 1/4 cup olive oil
  • 1 head garlic minced
  • 1 tsp oregano
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp cracked black pepper
  • 1/4 cup cilantro chopped

Instructions

  • Mix together all of the marinade ingredients.

  • Marinate the chicken pieces for at least 4 hours, preferably overnight.

  • Preheat your oven to 350 degrees. Place the chicken on a rack on a baking sheet lined in foil.

  • Roast for 50 minutes.
