Braised Beef (Instant Pot)
This recipe is super easy with tremendous results. Mix sauce ingredients together. Mix together with meat. Pressure cook. Done. It doesn’t get more low maintenanced than this.There a many different types of beef you can use with this recipe. Chuck, bottom round, beef ribs, beef shanks, chuck tender will all work very well. The best part of this recipe is that it takes only an hour in the Instant Pot as apposed to 4-6 hours in a slow cooker. If you don’t have a pressure cooker, you can definitely make this in a slow cooker on high for 4-6 hours or in your oven at 275 for 4 hours. Either way you cook it will be delicious. This meat is also great in Korean Beef Tacos, which will be in another segment.
Ingredients
The Beef
- 3-4 lb chuck roast
- 1 large onion quartered
Sauce
- 6 tbsp light soy sauce
- 3 tbsp rice wine
- 3 tbsp sugar
- 1 tbsp honey
- 1/2 Asian pear grated
- 1/4 tsp black pepper
- 1 cup beef stock
- 6 garlic cloves minced
Garnish
- sesame oil
- sesame seeds
- green onion
- cilantro
Instructions
Sauce
- Mix all sauce ingredients together. Set aside.

The Beef
- Cut chuck roast into 2″ pieces. This will help the meat cook faster.

- Add the beef, onion, and sauce mix to the Instant Pot. Set to the pressure cooker function. Cook on high for 1 hour.

- Release the pressure. If you’d like for the sauce to thicken, turn on the sautée function on medium and cook for 10 more minutes.

- Serve over jasmine rice. Garnish with sesame oil, sesame seeds, green onion, and cilantro.

This was the first recipe I made in my Instant Pot pressure cooker. Other than browning the chicken pieces, it took a whole 10 minutes to make. The chicken came out extremely tender and flavorful. It had the right amount of spice to it. Not overpowering whatsoever. The main ingredients in the sauce are gochugaru red pepper flakes, gochujuang red pepper paste, and doenjang soybean paste. The gochugaru and gochujang give it the heat while the doenjang adds a savory element. All 3 of these ingredients are used in a lot of Korean cuisine and can be found at all Asian markets.When purchasing chicken for this recipe, I recommend either using a whole chicken or just drumsticks and thighs. I bought a 10lb bag of whole chicken legs for $6.99 and processed them myself. You can ask your butcher to cut up a whole chicken for you into little pieces. I suggest learning how to do this by yourself and not being so dependent on everyone else doing the preparation for you. It’s a lot more fulfilling. Once you understand how to cut a whole chicken, which I will demonstrate in another segment, this will only take you a minute.

Ingredients
Chicken and Vegetables
- 3 lbs bone in chicken pieces cut into small pieces
- 1 small potatoes 1″ cubes
- 1 large carrot 1/2″ chunks
- 1/2 onion quartered
- 3 green onion chopped
- 1 tbsp canola or vegetable oil
Sauce
- 3 tbsp gochugaru red pepper flakes
- 3 tbsp sugar
- 2 tbsp gochujang red pepper paste
- 1/2 tbsp doenjang soybean paste
- 2 tbsp rice wine
- 2 tbsp oyster sauce
- 2 tbsp light soy sauce
- 2 tbsp garlic minced
- 1 tsp ginger grated
- 1/2 cup chicken stock
Garnish
- sesame oil
- sesame seeds
- green onion
Instructions
Sauce
- Mix all sauce ingredients together in a bowl. set aside.

Chicken
- Separate whole chicken legs into drumsticks and thighs.

- With a cleaver, cut drumsticks into 3 parts. If they are small drumsticks, cut in half.

- With a cleaver, cut chicken thighs into quarters.

- In the instant pot on the sauté function on medium heat, add cooking oil and brown the chicken pieces in a couple of batches.

- Mix in the sauce and the remaining veggies. Make sure that everything is coated in the sauce. Turn the instant pot to the pressure cooker function and set for 10 minutes. Yes, that’s right. 10 minutes.

- Release the pressure and remove the lid. If you’d like for the sauce to be a little thicker, turn the instant pot to the sautée function on medium heat and cook for another 10 minutes.

- Garnish with sesame oil, sesame seeds, and green onion.

Thai Pork Omelette

This recipe is very simple and straight forward. All of these ingredients are basic staples in my household. This omelette takes 5 minutes prep time and 5 minutes cooking time. So if you are really baked and impatient for food, but want to eat something of quality, this is a go to.If you want to use another protein such as shrimp or chicken, please do so. Shiitake mushrooms are a great substitute if you would like for this to be meatless. No more than 2 oz of protein is needed.I recommend making extra rice. It keeps in the refrigerator for several days. It is also great to use for making fried rice. If you have my diet, it will never go to waste.

Ingredients
- 2 large eggs beaten
- 1 green onion chopped
- 2 oz ground pork
- 1 tsp fish sauce
- 1 tsp oyster sauce
- 1/4 tsp white pepper
- 2 tbsp canola or vegetable oil
Garnish
- siracha
Instructions
- Beat eggs together with fish sauce, oyster sauce, and white pepper. Add remaining ingredients and mix together. Make sure that any large clumps of ground pork are broken up.

- Add the cooking oil to a skillet on medium heat. Add the egg mixture and cook for 4 minutes. As it cooks, pull the edges of the omelette towards the center and let any of the uncooked egg mixture spill over to the sides to cook. Repeat this a few times.

- Flip over. Cook for 30 seconds; just enough to cook it through.

- Serve with Jasmine rice. Garnish with siracha. I recommend to always make double the amount of rice than what the recipe calls for. It keeps in the refrigerator for several days and is great to use for fried rice.
