Baleadas
Baleadas are the most popular food in Honduran cuisine. The basic version consists of a flour tortilla smeared with refried beans made from red beans, crumbled queso fresco, and mantequilla cream. The tortilla is then folded in half, resembling a refried bean taco. Scrambled eggs, chorizo, and avocado are great additional topping that you can add. Simple, yet so satisfying.
Ingredients
- 1 tsp vegetable oil
- flour tortillas
- refried beans
- queso fresco crumbled
- sour cream
- avocado sliced
Instructions
- Heat up the cooking oil on a griddle over medium heat. Lightly toast the tortillas for less than a minute a side.



Shanghai Scallion Oil Noodles
Shanghai Scallion Oil Noodles
This recipe is the authentic version of scallion oil noodles that you would find in Shanghai, China. You pretty much fry green onions in oil and remove them when crispy. What you also end up making is oil infused with green onion essence. Add the soy sauces and sugar to the hot oil and it’s done in 30 seconds. Instead of stir frying the noodles in the pan with the sauce, the noodles are placed in a bowl and the sauce is spooned over. Then you top the noodles with the crispy fried green onions. Simple, but nothing short on flavor.
Ingredients
- 1/4 cup vegetable oil
- 6 green onions cut into 2” pieces
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 2 tsp sugar
- 1 lb dried Chinese egg, ramen, or udon noodles prepared according to the package directions
Garnish
- sesame seeds
Instructions
- Heat up cooking oil in a sauté pan over medium heat. Add in the green onions. Fry for 6-8 minutes until crispy. Scoop out the onions and set aside.

- Add the soy sauces and sugar to the oil. Mix. Turn off the heat as soon as it starts bubbling.


Cantonese-Style Ground Beef Rice and Eggs
Cantonese-Style Ground Beef Rice and Eggs
In a weird way, this recipe is like a Cantonese version of shakshuka. Ground beef rice and eggs is easy to prepare and is ready in 30 minutes. None of the ingredients are out of the ordinary. You can really use any type of ground meat or vegetables of your choosing. If you don’t have rice, the stewed ground beef is great over noodles.
Ingredients
- 1 tbsp vegetable oil
- 1 lb ground beef
- 1 medium white onion diced
- 2 tsp ginger
- 2 tbsp cornstarch dissolved into 1/4 cup water
- 1 cup frozen peas
- 1 tsp sesame oil
- 4 large eggs
- white rice for serving
Sauce
- 2 cups beef stock
- 2 tbsp oyster sauce
- 2 tbsp shaoxing cooking wine
- 2 tbsp light soy sauce
- 1 tsp dark soy sauce
- 1/4 tsp white pepper
Garnish
- sesame seeds
Instructions
- Mix the sauce ingredients together. Set aside.

- Heat up the cooking oil in a large sauté pan over medium high heat. Brown the ground beef for 6 minutes.

- Add in the onions and ginger, cooking for 5 more minutes.

- Pour in all of the sauce. Simmer for 10 minutes.

- Add in the frozen peas.

- Mix in the cornstarch slurry. Let the sauce thicken for 2 minutes.

- Crack in the eggs. Place a cover over the pan. Simmer on medium low heat until the eggs are cooked; about 5 minutes.
