Ingredients

  • 2 cups black eyed peas
  • 5 green onions chopped
  • 1 small red bell pepper seeded and diced
  • 1/2 cucumber seeded and diced
  • 1/2 cup parsley chopped
  • 1 cup grape tomatoes cut in half
  • 1 jalapeños finely diced
  • 1 lime juiced
  • 1/4 cup olive oil
  • 1 tsp black pepper
  • 1 tsp sea salt

  • Mix together the olive oil, lime juice, salt, and pepper.
