Sweet Potato Pone

Sweet potato pone is a custard-like dessert. It is very reminiscent of sweet potato pie, but without a crust and much sweeter. You can bake the batter in one large baking dish or ladle the batter into individual ramekins. Once the pone is finished, let cool completely and dust with powdered sugar.

Ingredients

  • 1 lb sweet potato finely grated
  • 12 oz evaporated milk
  • 1 large egg beaten
  • 1 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1 pinch salt
  • powdered sugar

Instructions

  • Mix together all of the ingredients.

  • Preheat the oven to 350 degrees. Grease a baking dish. Pour the batter into the dish.

  • Bake for 50-60 minutes, until the center is firm. Let cool completely.
