Cuban Pulled Pork Omelette
Cuban Pulled Pork Omelette
Another great use for leftover Cuban pulled pork. Use as a filling inside of an omelette with your favorite cheese and top with some sofrito. Grilled peppers and onions would be a great addition.
Ingredients
- 4 oz cuban pulled pork
- 3 large eggs beaten
- your favorite cheese
- sofrito
Instructions
- Add the beaten eggs to a greased griddle or skillet over medium high heat. Cook for 1 minute.
- Move the edges toward the center with a spatula. Add the pulled pork, cheese, and a couple tbsp of sofrito down the center of the omelette.
- Fold the right side over. Then the left.
- Roll over onto your plate. Top with some more sofrito.

Sofrito is used as a base for soups, stews, beans, and rice in many Spanish speaking countries such as Cuba and Puerto Rico. It is typically made out of a lot of green ingredients such as green bell pepper, cilantro, green onions, and culantro; similar to green seasoning used in African/Caribbean cuisine. Sofrito adds aromatics to whatever you add it to.Sofrito can be stored in the refrigerator for up to a month. I like to freeze it in ice cube trays and store in gallon sized freezer bags. You can then keep your sofrito for up to a year.

- 2 small green bell pepper seeded and chopped
- 1 red bell pepper
- 1 1/2 cup cilantro
- 1 1/2 cup culantro
- 1 head garlic
- 1 medium white onion
- 4 green onions chopped
- 2 roma tomatoes
- 2 tbsp oregano
Instructions
- Add all of the ingredients to a blender or food processor.
- Purée until smooth. Store in the refrigerator for up to a month or in the freezer for put to a year.
Cuban Style Black Beans
Cuban Style Black Beans
This is a quicker version of Cuban black beans using an instant pot. Using the instant pot cuts an hour+ off of the cooking time. This recipe happens to be vegan. If you want to add ham to this, please do.
Equipment

Ingredients
- 8 oz dried black beans
- 5 cup water
- 1 green pepper diced
- 1/2 medium white onion diced
- 4 garlic cloves minced
- 1/2 tsp salt
- 1/2 tsp sugar
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp cracked black pepper
- 1 tsp white vinegar
Instructions
- Add dried beans, 1/2 of the chopped green pepper, and water in the instant pot. Use the pressure cooker setting on high heat for 25 minutes.
- Once done, release the pressure.
- In a large sauté pan over medium high heat, sauté the onions, garlic, and other half of the chopped green pepper. Cook for 5 minutes.
- Add 1/2 cup of the black beans.
- With a bean masher or the back of a spoon, mash the beans.
- Mash with all of the vegetables into a paste.
- Add in all the rest of the beans along with 1 cup of the bean stock and all the rest of the seasonings. Simmer for 10 more minutes. Serve with your favorite dish.
