Laotian Omelette
Laotian Omelette
This Laotian omelette is veggie filled and only takes 5 minutes to cook. Serve it for breakfast or as a side to a multi course meal.

Ingredients
- 2 large eggs beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 green onions chopped
- 4 fill fronds finely chopped
- 2 tbsp cilantro chopped
- 3 snake beans finely chopped
- 1 bird’s eye chili finely chopped
- 1 roma tomato seeded and chopped
- 2 tbsp vegetable oil
Instructions
- Beat the eggs with salt and pepper.
- Mix in the rest of the ingredients.
- Heat up vegetable oil in a skillet or griddle over medium high heat. Pour in the egg mixture. Let set for a minute.
- Pull in the sides to the center. Cook for 2 more minutes until the bottom is browned.
- Flip and cook for 2 more minutes.
