Laotian Omelette
This Laotian omelette is veggie filled and only takes 5 minutes to cook. Serve it for breakfast or as a side to a multi course meal.

Ingredients

eggs
beaten

black pepper
3
green onions
chopped

fill fronds
finely chopped

cilantro
chopped

snake beans
finely chopped

bird’s eye chili
finely chopped
1
roma tomato
seeded and chopped

tbsp
vegetable oil
Instructions
Beat the eggs with salt and pepper.
Mix in the rest of the ingredients.
Heat up vegetable oil in a skillet or griddle over medium high heat. Pour in the egg mixture. Let set for a minute.
Pull in the sides to the center. Cook for 2 more minutes until the bottom is browned.
Flip and cook for 2 more minutes.
