There are brown sugar bubble teas that contain black tea. Lots of it. Like 3 tea bags worth per drink. This recipe is black tea dominant, with the brown sugar syrup, tapioca pearls, ice, and some half and half instead of milk. You will learn why this is the most popular flavor once you try it.

Equipment

Ingredients

Black Tea

  • 1 cup hot water
  • 3 black tea bags

Brown Sugar Syrup

  • 1/3 cup tapioca pearls
  • 1 cup brown sugar
  • 1/2 cup hot water

Brown Sugar Bubble Tea Assembly

  • tapioca pearls
  • 2 tbsp brown sugar syrup
  • 1 cup black tea chilled
  • 1/2 cup ice
  • 1/4 cup half and half

Instructions

  • Pour 1 cup of hot water into a cup with 3 black tea bags. Let steep for 20 minutes. Cool and set aside.

  • Bring a pot of water to a boil. Add the tapioca pearls. Once they float to the top, cover and simmer for 3 minutes. Turn off the heat and let sit for another 3 minutes.

  • Cool under cold water in a small strainer.

  • Place the brown sugar on top of the tapioca pearls in the strainer over a bowl.

  • Pour a 1/2 cup of hot water over the brown sugar and tapioca pearls. Let sit for 30 minutes.

  • Place the tapioca pearls in the bottom of a tall glass with 1 tbsp of the brown sugar syrup. Place the ice on top.

Pour in the black tea, another tbsp of the brown sugar syrup, and half and half.
