Jamaican Jerk Marinade

This is a great marinade to use if you are looking for something different. It is very straight forward to make; puree ingredients, and done. Using either mango or pineapple is optional, but I think that it adds more flavor than to have it without. This jerk marinade will be good in the refrigerator for up to a week. It is great on all cuts of pork, chicken, turkey, shrimp, salmon, and other firm fleshed fish.

Ingredients

  • 1/2 medium onion
  • 4 green onion
  • 3 tbsp thyme
  • 1 1/2 tbsp ginger
  • 1 head garlic
  • 1 tbsp cinnamon
  • 1 tbsp allspice
  • 1 tbsp white pepper
  • 1/2 tbsp nutmeg
  • 2 tbsp brown sugar
  • 2 tbsp maggi or soy sauce
  • 2 tbsp honey
  • 1 tbsp boullion powder
  • 1 habanero
  • 1 cup mango or pineapple

Instructions

  • Add all of the ingredients into a blender or food processor.
