Ingredients

  • 2 large eggs beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 green onions chopped
  • 4 fill fronds finely chopped
  • 2 tbsp cilantro chopped
  • 3 snake beans finely chopped
  • 1 bird’s eye chili finely chopped
  • 1 roma tomato seeded and chopped
  • 2 tbsp vegetable oil

Instructions

  • Beat the eggs with salt and pepper.

  • Mix in the rest of the ingredients.

  • Heat up vegetable oil in a skillet or griddle over medium high heat. Pour in the egg mixture. Let set for a minute.

  • Pull in the sides to the center. Cook for 2 more minutes until the bottom is browned.

  • Flip and cook for 2 more minutes.
