Saffron cumin rice has its origins in Mauritius from India. The influence is so strong that it has made rice the staple ingredient; hence why the Mauritius population is predominantly Indian. This rice pairs well with shrimp rougaille.

Ingredients

  • 1 cup basmati rice rinsed
  • 2 cups water
  • 1 tbsp cumin seeds
  • 10 saffron stamens
  • 1/2 tsp salt

Instructions

  • Place all of the ingredients in a pot over medium heat.

  • Cover and cook for 15 minutes. Remove from the heat and let sit for 10 minutes before serving.
