Ingredients
2tspvegetable oil
3tbspwhite oniondiced
1/2poblano peppersliced into strips
3largeeggsbeaten
saltto taste
1/2cupsalsa verde
queso frescocrumbled
Instructions
Heat up cooking oil in a skillet or griddle over medium high heat. Sauté the onions and poblano peppers for 2-3 minutes.
Pour in the egg mixture. Let set for a minute.
Scramble. Season with salt and cook for another minute.
