Spinach and Chickpeas with Chicken

Spinach and chickpeas is a healthy dish that takes minimal effort to prepare. This meal can feed a family of 4 for under $10; even less if eaten vegetarian.

Ingredients

  • 1 1/2 lbs boneless skinless breast or thigh cubed
  • 2 tbsp xawaash
  • 3 tbsp olive oil
  • 1 medium onion diced
  • 4 garlic cloves minced
  • 3 roma tomatoes diced
  • 1 jalapeño chopped
  • 1 tbsp curry powder
  • 2 cups chickpeas
  • 4 cups spinach washed
  • salt to taste

Garnish

  • cilantro chopped

Instructions

  • Heat up cooking oil in a large sauté pan over medium high heat. Add in the chicken. Season with xawaash. Cook for 8 minutes. Remove from the pan and set aside.

  • In the same pan, sauté the onions for 5 minutes.

  • Add in the tomatoes, garlic, and jalapeño. Sauté for 5 minutes.

  • Season with the curry powder. Cook for a minute.

  • Toss in the spinach. Sauté for 5 minutes.

  • Add in the chickpeas. Sauté for 3 minutes.

  • Add the chicken back in. Cook for 3 more minutes.

  • Turn off the heat. Garnish with cilantro.
