Spinach and Chickpeas with Chicken
Spinach and chickpeas is a healthy dish that takes minimal effort to prepare. This meal can feed a family of 4 for under $10; even less if eaten vegetarian.

- 1 1/2 lbs boneless skinless breast or thigh cubed
- 2 tbsp xawaash
- 3 tbsp olive oil
- 1 medium onion diced
- 4 garlic cloves minced
- 3 roma tomatoes diced
- 1 jalapeño chopped
- 1 tbsp curry powder
- 2 cups chickpeas
- 4 cups spinach washed
- salt to taste
Heat up cooking oil in a large sauté pan over medium high heat. Add in the chicken. Season with xawaash. Cook for 8 minutes. Remove from the pan and set aside.
In the same pan, sauté the onions for 5 minutes.
Add in the tomatoes, garlic, and jalapeño. Sauté for 5 minutes.
Season with the curry powder. Cook for a minute.
Toss in the spinach. Sauté for 5 minutes.
Add in the chickpeas. Sauté for 3 minutes.
Add the chicken back in. Cook for 3 more minutes.
Turn off the heat. Garnish with cilantro.
